Cascara is dried coffee cherry! This one comes to us from Finca Alcatraz, and is a mix of Bourbon, Caturra, and Gesha varieties.
After the coffee cherry is picked, it is brought to what is called a wet mill to be depulped, often washed, and then dried. After it is pulped, Don Wilfredo separately dries the pulped skin of the fruit, resulting in something akin to a tea.
Just place 10g into a cup and pour 250g of hot water over top. Let it infuse for about 5 minutes and enjoy a cup filled with notes of tart cranberry, sweet apple, fruit leather, and a touch of fall spices. Especially with longer infusions, the mouthfeel can get quite jammy or syrupy and is quite the treat. If you're looking for something more delicate, just add more water.
This is also great to use in baking, cocktails, pretty much anything culinary!
