The Impression

Mango / Tamarind / Nectarine / Panela / Spiced / Structured

Incredibly nuanced and profoundly balanced, we found a melange of tropical fruits layered over a buttery, velvety body of panela and ginger, with a crisp stone fruit acidity and an effervescent finish. This coffee is a well-composed symphony of flavor, with each component complementing the last to form something truly unique.

Notes: This is an exceptionally dense coffee that needs 7+ days of rest after roast before brewing. Our favorite brews have been with the V60, although flat-bottom brewers become easier to work with further off roast. Brew with little agitation and with slightly lower temperatures (~92°C) for best results. 

 

The Story

Located in Zipacon, Cundinamarca, Colombia, La Palma & El Tucan (LPET)is a forward-looking, multi-faceted coffee company that has dedicated itself to rethinking the coffee industry. The owners, Felipe Sardi and Elisa Madriñan, have shown time and time again that their commitment to changing the industry status quo is made tangible through their innovations in the coffee industry, from cup quality to community-based, agroecological business models. All of which they see as completely intertwined, stating that quality simply cannot come before community. 

LPET began in 2013 and has since grown into a large team of passionate coffee professionals, showing the world the true value of sustainable farming practices with every coffee they share - which is often on the competition stage. They continue to look to their surroundings for inspiration and remain humbly dedicated to their work. 

At the core of their operation lies two lines of coffees: Estate & Varietals, which showcases rare cultivars from their personal farm. They are constantly experimenting with agroecogical practices and post-harvest processing. The other is known as Neighbors & Crops, which is a program dedicated to giving market access to neighboring small-holder farmers by purchasing their coffee in cherry and processing it at their state-of-the-art facility. 

In 2018, LPET became 100% fully organic and hasn’t looked back. That year, they cut down thousands of coffee trees to make way for 24 additional plant species to create a harmonious polycultive space. Their farm lives on a diet of organic compost, which they make themselves and reduce the need for external inputs and allow for increased carbon sequestration.
