About 

This Castillo variety was grown in organic conditions, under the shade of Banana and Guadua trees and lovingly cared for by the Hurtado-Gambas. It was harvested at peak ripeness and fermented for 10 days before begin dried for another ten on the family's elda, a concrete drying patio.
