We're tasting

Fig jam, black plum, apple pie, raisin, blackstrap molasses, intense, syrupy, super sweet and wild.

Process

Ripe fruit was picked, rinsed and floated for quality before being delivered to the wet mill and left to "rest" in an open-air fermentation in a large ceramic tank for 2 days. After this rest period, the fruit was pulped and carried by hand to a natural cold spring, or quebrada, roughly 200 meters away from the wet mill. Once at the quebrada, it was stored in grainpro bags and fermented for 11 more days.

In the Brew

This is a thick, syrupy brew that extracts easily and quickly. Fun and fairly forgiving to play around with different ratios - just don't underextract. Pour-over highlights a playful acidity, espresso allows the sweetness to shine.

Expect

Thick, juicy, and incredibly wild and lively. V60 lets the stone fruit and apple shine, while the espresso brings out the intensely sweet dried fruit character, almost like a fruit roll-up.

If it's not quite there

Tasting salty? Grind a little finer. Tasting astringent? Go coarser.
