We're tasting

Raspberry, violet, bubblegum, vanilla, beaujolais. Juicy, lively, and floral.

Process

An experimental microlot, one of the jewel's of Jacob Montero's repertoire. This offering is 100% catuai separation from La Pastora, one of the highest lots in the region, at 2000masl. In fact, these cherries can see the Pacific on a clear day. They are harvested and transported to the mill before being rinsed for cleanliness and cup uniformity and stored in metallic, cylindrical tanks. The fruit ferments there for four days before being taken out, rinsed a final time and dried on raised beds in a mix of shade and sun.

In the Brew

Highly complex and expressive for an anaerobic. Very light roast. As a pour-over, it can take a bit more heat than normal. We've been enjoying a finer grind as well.

Expect

Highly sweet and lively, while still reserved and complex. Red berries, bubblegum level sweetness. Soft touch of vanilla in between purple florals reminiscent of violet and lavender.

If it's not quite there

This is a very light roast. Let it rest at least a week. If it comes out flat, grind a little finer.
