We're tasting

Biscoff, dark chocolate, kahlua. Creamy, full-bodied, simply delicious.

Process

Red Honey. Freshly ripened fruit is harvested and transported to the wet mill, where it is left in a large, open-air ceramic tank for a "rest" period of 18 hours. It is then pulped with little water, with roughly 50% of the mucilage left intact on the seed. It was dried on a mix of patio and raised beds for an average of 15 days.

In the Brew

Our most developed roast profile. Just past medium. Easy-going and very forgiving. Perfect for immersion or espresso. Low acidity, big body, high sweetness - a dangerously delicious cup.

Begin with aeropress inverted. Bloom with 50g or enough to wet all of the grounds. Give it a nice swirl to begin immersion. Then simply fill to 250g and leave til 2:45. Cap it, flip it, press it and voila, a rich, chocolatey cup.

Expect a creamy, thick shot. No preinfusion necessary, but can enhance the body even more if desired.

Expect

In both methods, expect a tonne of biscoff and dark chocolate. Big, creamy body that brings kahlua to mind. Very indulgent. Sweet, not bitter.

If it's not quite there

Easy to extract. Grind coarser if you're looking for the biscoff to shine. Finer for more chocolate. Bitter? Too fine, back it up.
