We're Tasting

This offering from the Liz-Andela Family is bright, berry-filled and abound with a bouquet of florals. To us, it brings to mind cane sugar sweetness with black and blue berries, fresh lemon, hibiscus and lavender. Juicy mouthfeel, medium acidity, gorgeous from start to finish. 

We're brewing on V60, with a grind on the coarse side and with ~94C water. Short brew times of 2:30 ish minutes will accentuate the crisp, acidic berry character, and longer brew times will accentuate the body-forward, cane sugar qualities.

Processing Info

Harvested during the fly crop (mitaca) from June to July at Finca El Pedregal, this yellow bourbon was picked by hand, floated and sorted for quality, and set to ferment in tanks open to the cool environment for five days. It was then pulped with very little water, resulting in a dark red colour of parchment.

It was dried in marquesina (greenhouse) for a total of 14 days and rested one month in parchment before being dry milled and stored in the Native Root warehouse in Bogota.
