About
This is an outstanding example of the potential of the pink bourbon variety. Originally thought to be a natural mutation of red bourbon, it turns out pink bourbon is actually an Ethiopian landrace variety recently transplanted in Huila. The seeds planted at Finca Alcatraz come directly from the grower in nearby Palestina, Huila that was said to have discovered this variety.
With loads of native trees and hillside forest cover, this fruit is slow to both mature and dry, making for some wildly complex cups.

Drying Method |
A mix of raised beds and marquesina (greenhouse) over a period of 30 days. Weather is always an issue, with rain and cold sometimes preventing lots from drying at all. Because of this, Don Wilfredo runs a rigorous drying program, moving the cherries up to 7 times per day. |
