Green apple, mellow caramels and chocolates. A soft trail of green florals, reminiscent of lemongrass, on the finish. Balanced, rich and clean.
About
The Cochadas is an absolute staple of LULO's menu. It's an interesting washed expression of the castillo variety. Day lots (cherry harvested in one day of harvesting) are pulped, washed and amalgamated throughout the week in a open, ceramic tank filled with water. This allows for easier workflow and the subtle fermentation adds complexity to the cup. Win-Win.
