A wonderfully complex and clean cup. Dark red fruits like pomegranate and red plum, with a delightful, warming vanilla-like character. Fresh pineapple and beautiful citric acidities make for a fantastic, velvety mouthfeel. Candy-sweet and all around delicious.

About 

An experimental microlot, one of the jewel's of Jacob Montero's repertoire. This offering is 100% catuai separation from La Pastora, one of the highest lots in the region, at 2000masl. In fact, these cherries can see the Pacific on a clear day. They are harvested and transported to the mill before being rinsed for cleanliness and cup uniformity and stored in metallic, cylindrical tanks. The fruit ferments there for four days before being taken out, rinsed a final time and dried on raised beds in a mix of shade and sun.
